Make Restaurant-Level Truffle Dishes At Home On A Budget: Extended Cut With Steven Chia’s Dad Jokes




#TalkingPoint presenter Steven Chia is not someone to be truffled with, especially when it comes to his love for truffle-based dishes. In this extended cut of a scene in an episode about hacking inflation, Steven saves some dollars by learning from another funghi-loving fun guy, Chef Sameer Chablani. Learn more about fancy dishes you can make from an easy homemade truffle paste, and catch all their dad jokes that didn’t make it into the TV episode. Chef Sam shows how to stretch out a bottle of truffle oil 4-5X by incorporating it in a truffle paste which can be stored in the freezer for up to a month. Watch the full episode of Inflation Woes: How To Stretch My Food Dollar?: https://youtu.be/LY-IM83hkY8 TRUFFLE PASTE Ingredients 400 grams of white or brown button mushrooms 2 tbsp olive oil A small bunch of thyme 2 tbsp white truffle oil Instructions - Chop mushrooms. You can use white and/or brown button mushrooms. White for a sweeter flavour and brown for a more earthy flavour. - Blend mushrooms with 2 tablespoons of olive oil in a food blender or processor. - Sear the raw mushroom purée on a hot pan. Use a non-stick pan if you want to do less cleaning. - Once the steam from the pan settles, lower heat and continue to cook until liquid is gone and the mushroom’s turned into a dark coloured paste. It’s going to take about 20 to 30 minutes. The term is called mushroom Duxelles. - Take mushrooms off heat. Let it cool. Add chopped thyme. - Mix 2 tablespoons of truffle oil into paste. TRUFFLE MUSHROOM CREAM PASTA Ingredients 200 grams of brown button mushroom A dash of olive oil 1/2 stem of leek, finely chopped 1/2 sweet onion, finely chopped A small bunch of thyme A small bunch of rosemary 200-220 ml of heavy cooking cream 2 tbsp of truffle paste Pinch of salt Cooked pasta of your choice A small bunch of chives Parmesan (optional) Instructions - Roast 200 grams of brown button mushrooms in olive oil on medium high heat. Make sure pan is hot before you add your mushrooms so they won’t stick and absorb the oil - Let mushrooms sear for about 30 seconds or until the oil is gone. Flip them once. Let them sear for another minute. It’s important not to stir or flip them too much at this stage as the mushrooms will release water and steam instead of sear. - Once liquid is released from the mushroom, turn down the heat and continue to cook for another 3 minutes. - After about 1 minute, lower heat further to medium low. Make space in the middle of the pan and add finely chopped leeks and sweet onion. Let it sear. Add a little olive oil if the pan is too dry - Add chopped thyme and rosemary. - Add about 200-220 ml of heavy cooking cream and very gently simmer for 3 to 4 minutes to infuse everything in the cream. - Take pan off the heat. Add 2 tablespoons of truffle paste and a pinch of salt to season. - Add more if you like a stronger truffle taste. - Add cooked pasta of your choice, and a bit of pasta water if you like your pasta less thick. - Add chopped chives and serve. Shave or grate a hard cheese like parmesan and let it melt onto the warm pasta (optional) TRUFFLE TOAST Ingredients Sourdough bread A drizzle of olive oil Some cream cheese Half a tbsp of truffle paste A small bunch of chives Instructions - Cut thick slices (around 2 cm) of sourdough bread. - Drizzle a bit of olive oil. Pop into oven or toaster. - After about 6-8 minutes, take bread out of the oven or toaster and spread some cream cheese on it. - Spread half a tablespoon of truffle paste on top of the cream cheese. - Sprinkle finely chopped chives, serve.
