Do you like your french fries a dark golden brown? It turns out cooking potatoes at high temperatures with an air fryer can produce high levels of acrylamide, a chemical that could potentially cause cancer and commonly found in starchy foods like potatoes and bread. The European Food Safety Authority (EFSA) noted that generally air fryers produce 30-40% more acrylamide than conventional deep fryers. In February 2021, tests by the Hong Kong Consumer Council found acrylamide in french fries cooked in various models of air fryers. In the case of six models, the acrylamide was above EU benchmark levels, with one particular model exceeding the benchmark by up to 13 times. How do you air fry potatoes more safely? Three basic rules: Avoid cooking at very high heat, soak your potatoes well, and don’t store potatoes in the fridge because keeping them at a low temperature also increases its acrylamide content.
