In South Korea, three-Michelin starred restaurant Gaon serves food inspired by traditional flavours of Korea's culture. Chef Kim wants to pay homage to the country's natural ingredients while creating unique dishes. His cuisine focuses on using the best seasonal ingredients with a contemporary twist. We also turn our attention to Masahiro Kikuno, who at 30, became the youngest member of an exclusive and prestigious association for independent watchmakers. Largely inspired by the artisans of the Edo period, the self-taught watchmaker uses traditional techniques in watchmaking to create the first-of-a-kind wadokei wristwatch.
