
Who doesn’t love burgers? In the northern Chinese province of Hebei, burgers are king. But instead of beef, the filling of choice is donkey. In fact, people in Hebei love it so much that there’s a popular saying: “In heaven, there is dragon meat. On earth, there is donkey meat.” We went to Baoding, the city that claims to be the birthplace of donkey burgers, and met Li Li, the owner of a famous donkey meat shop, to find out how donkey meat became so big here, and—most importantly—what it tastes like.
