Ta’ameya is an Egyptian street-food staple that is considered the precursor to falafel. It's made with fava beans, not chickpeas, as well as leeks, coriander, and spices and eaten in an Egyptian flatbread called aish baladi. We headed out to Zooba, a Cairo-based street-food chain in New York City's Nolita, with YouTuber Karim Jovian to see how it's made and try it out.
